The story
In the old centre of Nanterre, just west of Paris, Cabane delivers what it calls bistronomie décontractée — relaxed, high-quality cooking without the starch. The restaurant has earned a Michelin Recommended distinction, a nod to the consistency and conviction of Chef Jean-François Bury, who holds the title of World Champion of Catering.
Bury’s cooking is, in his own words, goûteuse et singulière — flavourful and singular. It follows the seasons and respects the produce. The à la carte menu is built around a starter, main and dessert formula at 49€, with a lunch version (starter-main or main-dessert) at 37€. Expect dishes that are direct and ingredient-led: an organic egg with green asparagus and verbena, a tuna tataki with crunchy vegetables and yuzu vinaigrette, or a risotto of prawns with basil and lobster bisque. The kitchen also sends out a confit beef rib with barbecue sauce and herb-crushed potatoes.
Cabane opens Wednesday through Saturday for lunch and dinner, with a happy hour from 17:30 to 19:30. The atmosphere is casual and welcoming, with outdoor seating available and a separate tapas-style "Bringue" menu for anniversary parties. It’s a straightforward, confident expression of modern cuisine, the kind of place that earns its recognition quietly, plate by plate.
