The story
In the historic heart of Nevers, between the churches of Saint-Pierre and Saint-Étienne, Restaurant Jean-Michel Couron occupies a house that has been transformed over the years. The dining room is contemporary, with light tones and fewer than ten tables – a deliberate choice to preserve tranquillity and focus on food made “of the moment.” For a more surprising setting, there is a small vaulted room dating from the 14th century.
Marie-Hélène Couron welcomes guests, while chef Jean-Michel Couron works with local producers and suppliers to keep ingredients fresh and short-circuit. His cooking is rooted in respect for products and seasons, evolving constantly and without following trends. This approach to modern cuisine earned the restaurant a Michelin Recommended distinction.
The menu changes with the market and the chef’s inspiration. At lunch from Wednesday to Friday, a formula offers a choice of starter and main or main and dessert from the Market Menu (€43.50). The Discovery Menu (€57) and Tasting Menu (€67) add more courses, while a vegetarian option (€34.50) is composed according to the season and the baskets of organic market gardeners.
Dishes might include a grilled octopus tentacle with pea mousseline, peach and basil, or foie gras terrine breaded in “burnt” bread, red cabbage confit and almond cream. A fillet of Charolais beef with spring vegetables and a red wine reduction with cocoa and thyme reflects the chef’s respect for local produce. Desserts range from a hot chocolate with gianduja to roasted apricots with coconut milk and gingerbread powder.
Two floors below the dining rooms, bottles are selected with care, from great French wine names to discoveries. The wine list is designed to complement the food, with suggestions for each dessert – a Maury Rouge Vintage for the chocolate, a Muscat de Rivesaltes for the rhubarb marmalade.
Jean-Michel Couron’s modern cuisine is a quiet statement of craft, served in a setting that balances history and contemporary comfort.
