At La Pie qui Couette in Nîmes, there is no door to push, no dining room to cross. The counter sits directly in front of the market, open to the bustle of the Halles. The cooking happens in real time, with the morning’s haul. "Cuisine vive, comptoir ouvert" – lively cooking, an open counter. The restaurant describes itself as a "comptoir bistronomique," a place where the energy of the market meets precise, sustainable Mediterranean cuisine.

From Grand Kitchens to the Halles

Chef Emmanuel Leblay grew up the son of a charcutier, learning respect for the product early. He trained in the kitchens of Guy Savoy, Alain Passard, and Alain Senderens, and worked in London, Montreal, and Cannes before returning to the south. He chose Nîmes because, as he puts it, "the true taste is often hidden in simple things." At the Halles, he and his team of seven – including chef de cuisine Aurélien, server Eric, and sommelière Églantine – work without a net, cooking what the market provides each morning.

A Cuisine of the Season, by Conviction

The restaurant changes its menu not by the calendar but by what the market murmurs. In winter, that means roundness and comfort; in spring, brightness. The kitchen works with local producers, from the Gard and Occitanie, and holds the "Militant du Goût" label for its commitment to local, seasonal cooking. The Michelin Guide has recognized this sincere approach for years, and in 2026, the restaurant once again appears in its pages – a confirmation of an identity built on product, place, and the daily rhythm of the market.

More Than a Meal: A Ritual

After the meal, the ritual continues. As the chef puts it, "the meal doesn’t end with dessert." The "café de la Pie" is a three-in-one: cannelés, a strong coffee, and a glass of rum from a selection of over thirty bottles – rums from the Antilles, Réunion, Vietnam, plus house-made infusions. It is a signature of the counter, a final moment of connection before leaving. The restaurant also offers "cuisine nomade" – outdoor cooking with a brasero for private events, bringing the same energy beyond the market walls.
