The story
At Le Mas de Boudan, on the outskirts of Nîmes, Chef Jérôme Nutile runs two distinct restaurants within one beautifully restored mas. While the gastronomic dining room holds a Michelin star, it is the more relaxed Bistr'AU that has earned a Michelin Bib Gourmand for its good quality, good value cooking. Here, the Chef – a Meilleur Ouvrier de France since 2011 – expresses a more casual, generous side of his craft.
The atmosphere is that of a welcoming bistrot, where the focus falls squarely on the produce. The kitchen works with the rhythms of the market, building a menu that is "gourmande et juste" – generous and honest. This commitment to freshness is rooted in the estate itself. A dedicated kitchen garden, expanded during the spring of 2021 with the help of landscape artisan Frédéric Faure, supplies a rotating selection of herbs: thyme, chives, lemon balm, sage, and more unusual varieties like strawberry mint and chocolate mint. These are watered with rainwater collected from the old agricultural well, and the garden is cared for using recycled wood chip mulch – a philosophy of "nothing is lost, everything is transformed" that extends from the soil to the plate.
The Bistr'AU is one part of a larger culinary universe at Le Mas de Boudan. The estate also includes a gastronomic restaurant, a hotel with three rooms and a suite, and spaces for private events. But in the bustle of the bistrot, the experience is refreshingly direct: seasonal ingredients, skilfully handled, served in a setting that feels both authentic and effortlessly warm. It is a place where Chef Nutile's modern cuisine – rooted in the Camargue and the garrigue – is at its most approachable, without ever sacrificing quality or care.
