Chef Damien Sanchez, a Nîmes native, draws on the bounty of the Gard region to craft a cuisine that is both rooted and inventive. Damien Sanchez describes himself as an “amoureux du Gard,” and his cooking reflects a deep respect for local producers and seasonal rhythms. He and his partner Séverine lead a loyal team, training young apprentices in both kitchen and service. The result is a dining experience built on genuine hospitality and technical skill.
Skab’s modern cuisine is anchored in the flavours of the Mediterranean and the Languedoc. The menu changes with the seasons, highlighting ingredients like truffle in winter, spring lamb, and the region’s finest vegetables. A recent press mention from Le Figaro noted a “filet de Saint Pierre juste poêlé” with fenouil three ways – a telling example of the chef’s ability to elevate simple produce with clarity and depth.
The dining room is refined and subdued, with touches from local Gard artisans. In warmer months, the shaded patio – a classic feature of Nîmes houses – becomes a sought‑out spot for lunch or dinner.
