A small house with white walls and blue shutters stands quietly on the waterfront. Inside, the dining room is elegant and modern, evoking the spirit of a voyage. This is Élise, Poissons & Braise, the second table of chef Alexandre Couillon on the island of Noirmoutier-en-l'Île.
Couillon cooks instinctively, translating his life and his land into plates without embellishment. “Respect the other, open up to them, inspire them and be inspired by them” is the philosophy that runs through the house, shared with his wife Céline. The restaurant’s name – Poissons & Braise – signals a focus on seafood and the controlled heat of the grill, a natural pairing for a chef rooted in the Atlantic.

Élise, Poissons & Braise is open for lunch and dinner, closed Sunday through Tuesday (Monday and Tuesday in July and August).
