The story
Florian Bras and Valentin Ecochard run La Cuisine du Marché in Nyons as a tightly focused French bistro. The two friends met at the École Hôtelière d’Arbois and now share every station in this compact kitchen. Their training shows in how they balance technique with straightforward ingredient handling. The lunch menu opens with moist gougères and a veal carpaccio dressed with Nyons olives and homemade sun-dried tomatoes. Free-range chicken supreme arrives alongside creamy Comté polenta and a tight reduction. Evening plates shift toward heartier preparations like a veal-pork-foie gras pâté en croûte or a Montbéliarde steak paired with spelt and morel mushrooms. Every dish lands cleanly without excess decoration.
The entire operation sits inside a twenty square meter room featuring four small tables and original fifties-era tiling. A wall map crafted entirely from wine corks replaces traditional decor.
