The story
At Place des Trois-Pigeons in Pamiers, François and Marie Bassas run a kitchen that answers to the seasons. “Here, nature decides,” they say, and their cooking follows that rule. They work with local products, organic and seasonal, to create a modern cuisine that is both responsible and deeply rooted in the Ariège region.
The dining room is welcoming, with air conditioning and outdoor seating for warmer days. Wheelchair accessible and open for lunch and dinner from Wednesday to Saturday. Parking is available, and the restaurant also offers meal kits and private-party options.
Lunch, served Wednesday to Friday midday, offers a choice between a three‑course formula (€40) or a four‑course version with both a land and sea dish (€54). Evenings and Saturday lunch bring a “Surprise” menu: three courses at €50 or four at €64, with an optional wine pairing for €20 or €26. A cheese plate, either a tasting (€12) or to share (€7), and a kids’ menu (€20) round out the offer.
Bassas earned its place in the 2026 Michelin guide with a “Recommended” rating – a nod to the honest, precise cooking and the genuine hospitality of the Bassas family. For anyone seeking modern cuisine in Pamiers that respects both the plate and the planet, this is a stop that delivers on its promise.
