The story
Le Clos Saint Martin - La Métairie sits in the quiet hamlet of Languit, on the commune of Arvigna, a short drive from Pamiers and Mirepoix. The setting is an old farmhouse, lovingly converted into a convivial, cosy dining room. Chef Mélanie Zervos, alongside Mickaël, runs the kitchen with a clear philosophy: fresh, local ingredients, made entirely from scratch.
The menu changes with the seasons and the market. Zervos describes her cooking as creative, original, and gourmet – a style that earned the restaurant a Michelin Bib Gourmand for good-quality, good-value cooking. Guests can choose from several formats: a three-course “Inspiration” menu at €52, a four-course at €58, or a five-course at €70, each with optional wine pairings curated by sommelier Nicolas.
A seasonal “Printemps-été” menu offers dishes such as crab rillettes with coconut milk, lemongrass, and yuzu mousse, or skate wing with celery and textured lemon. For heartier appetites, there is a “Métairie” menu featuring veal sweetbreads lacquered with hay-infused jus, and smoked beef pavé with cocoa and whisky jus.
