The story

Auberge de Briant in Paray-le-Monial – Michelin-Recommended French Cuisine

The Setting

In the heart of the Brionnais region in southern Burgundy, Auberge de Briant is a welcoming restaurant and inn where Chef Filipe Pereira presides over the kitchen. The dining room is also a permanent gallery for the bold paintings of artist Jean-Jacques Branche, adding a distinctive visual layer to the meal. The restaurant holds a Michelin recommendation and is also recognized as a Maître Restaurateur de France, a distinction that guarantees the use of raw ingredients and freshly prepared dishes.

The Food

Chef Pereira’s cooking is rooted in the finest local ingredients. He builds his menus around Charolais beef, the celebrated meat of the region, as well as fresh fish according to the day’s arrival and seasonal produce from the surrounding countryside. The menu is structured around several options, including the Clara-Marie at 52 euros (entrée, fish or meat, cheese, and dessert) and the Louisa-Rose at 34 euros. A seven-course Découverte menu at 75 euros offers a tasting journey through the chef’s current carte. Specific dishes from the menu include a roasted fillet of Charolais beef with a potato amandine cooked in duck fat and Madagascar pepper, and a roasted sea bass fillet with a tian of vegetables and a curried mussel cream. Desserts range from a reworked lemon meringue tart to a Norwegian omelette with mango sorbet.

The Experience

The restaurant is open for dinner, with a terrace for outdoor seating in warmer months. The atmosphere is one of genuine hospitality, with the team focused on ensuring a relaxed and attentive experience. For those who prefer to dine at home, the restaurant offers takeaway from the carte, with 24 hours’ notice, and delivery within a 20-kilometre radius. The Brionnais region itself rewards exploration, known for its Romanesque churches, châteaux, and the rolling green landscapes that produce the famous Charolais cattle. Auberge de Briant is a straightforward, accomplished stop for anyone seeking real French gastronomic cuisine in Burgundy.
