The restaurant’s seasonal tasting menus — available in four, six, or seven courses — embody this approach. A lunch menu, served Wednesday through Friday, is described as a place where tradition and creativity meet, guided by the seasons and the land. The longer seven-course experience is reserved for dinner or Saturday lunch. Wine pairings are offered, drawing from a cellar of carefully selected bottles.
Beyond the plate, the table itself is personal. In the studio as in the kitchen, Ayumi and Romain shape each plate and bowl by hand, transforming poultry carcasses, fish bones, or peelings into a singular clay.
