Ama Siam brings its mother’s Southeast Asian cooking to a quiet corner of Paris. The Souksavanh brothers founded the Belleville spot just steps away from their earlier venture, Lao Siam. Their kitchen stays anchored in the flavors of Laos, Vietnam, and China. Every dish follows the exact note on their homepage: celebrating our childhood cuisine by putting our mother’s recipes at the forefront.
Le Fooding recently highlighted how the menu turns those family memories into sharp, layered bites. You will find betel leaves stacked with dried shrimp, ginger, shallots, shredded coconut, peanuts, and chilies. The Thai and Vietnamese cooking here relies on fresh aromatics like lemongrass and garlic, served over whole bass or sticky rice cakes. Desserts shift toward lighter textures, featuring corn kernels suspended in coconut milk tapioca and homemade ginger ice cream paired with a lotus blossom cookie.
Fragos and Lecourtier designed the dining room with a deliberate Brutalist approach. Corrugated plaster walls meet polished terrazzo floors, creating a grounded space for the evening service. Flashy barstools line the counter, and an outdoor terrace sits ready for warmer days. The rough plaster contrasts with the cool stone underfoot, giving the space a steady, unpretentious weight.
