The story
In Spanish, ambos means both. For Cristina Chomet Tejeda and Pierre Chomet, the name is personal: it represents the two of them, together in the kitchen of their own restaurant. Located on rue de Vaugirard, in the quiet Luxembourg quarter of Paris, Ambos is a warm, open space where the couple’s shared vision takes shape. Their cooking is described as “une cuisine sans frontière mais non sans racines” – without borders but not without roots. That phrase captures the spirit of the place: a modern cuisine that draws from diverse influences while remaining grounded in technique and seasonality.
The menu changes with the seasons, but a recent carte offers a clear sense of the ambition. Starters include a red tuna with strawberry, eggplant, dashi, and buckwheat; an ajo blanco with cuttlefish, grapefruit, and bottarga; and white asparagus from the Landes with purple shiso and burnt orange. Main courses feature line-caught pollock with wild garlic butter, shellfish, and green asparagus; Peruvian oca with brown butter, cachapa, cacao, and jalapeño (vegetarian); and farm lamb from Pays d’Oc with sardines, chimichurri, and Jerusalem artichoke. Desserts like chocolate miso and coconut-passion fruit sorbet with cassava and basil round out the experience.
Ambos also offers several tasting menus: the three-course “Éveil des Sens” (available at lunch), the five-course “Voyages et Racines”, the seven-course “Sans Frontières”, and the nine-course “Horizons croisées” (available at dinner). Each menu can be paired with wines.
The restaurant’s Michelin Recommended status reflects the precision and personality of the cooking. But what lingers is the sense of partnership. “C’est toujours mieux à deux,” the website says – it’s always better together. At Ambos, that feeling extends from the kitchen to the table.
