The Founders and the Kitchen

Anima in Paris opened its doors at 78 Rue du Cherche-Midi as a tribute to traditional Italian cooking adapted for modern dining. Co-founders David Lanher and Marco Marzilli brought in Piedmont-born chef Matteo Testa after a recommendation from chef Simone Tondo. Testa approaches every plate with a strict focus on seasonal produce and clean preparation. This grounded philosophy earned the restaurant a spot on the 2026 Le Fooding list.

Regional Plates and Wood-Fired Classics

Giovanni Garufi manages the enameled wood-fired oven, turning out over twenty pizza varieties that highlight ingredients like yellow Vesuvian tomatoes and spicy n’nduja. The Italian menu traces distinct regions, such as a scampi tartare paired with Puglian stracciatella cheese and bottarga. The team finishes meals with a vanilla and raspberry panna cotta finished with balsamic vinegar. Sourdough bread arrives daily from Ten Belles Bread while espresso comes from Brûlerie Giamaica Caffè.

Light, Tile, and Vintage Textiles

The dining room retains the original industrial bones of a historic tapestry atelier, including heavy hardwood flooring and period tiles. Large cathedral-style windows flood the space with daylight before black walls and dimmed fixtures create an intimate evening setting. A Calacatta marble counter displays green veins that echo the Gio Ponti textile mounted on the main wall. Careful acoustic treatment keeps conversation easy despite the high ceilings.

David Lanher has a real talent for unearthing beautiful old spots (Caffé Stern, Le Bon Saint Pourçain , Racines des Près …) and injecting them with a little soul. Just take Anima, a former tapestry studio he discovered alongside Rome-native Marco Marzilli, Daft Punk’s ex-impresario. They’ve kept the old tiling, the chunky hardwood floors and the big cathedral-like bay windows, and decked it all out in black with an emerald-veined white Calacatta marble bar and an enameled wood-fired oven. Piedmont-born chef Matteo Testa still manages the kitchen, but the pizza paddle has now changed hands, as Giovanni Garufi keeps the twenty-some pizza varieties baking. The day we went for lunch: an energetic scampi tartare combining stracciatella (a fresh cheese from Puglia) and bottarga, teased with a little lemon zest; a volcanic, spicy Calabra pizza (yellow Vesuvian tomatoes, fior di latte, n’duja, caciocavallo, oregano and basil), perfectly cooked and served on a beautiful vintage plate from Blanche Patine; before ending the meal with an excellent vanilla and raspberry panna cotta topped with a dash of balsamic. As a bonus, there’s bread from the neighboring Ten Belles Bread and coffee from the Brûlerie Giamaica Caffè in Verona, just a little further away. // D.C.
