On the rue Maître-Albert in the Latin Quarter, Atelier Maître Albert occupies a building that has stood since 1400. Architect Jean-Michel Wilmotte has shaped the interior into a clean, modern space that respects the old stone walls. In winter, a fireplace warms the main room; in summer, the thick stone keeps the air cool. The atmosphere is relaxed and welcoming, with a bar, a wine library, and private salons for larger groups.

Chef Emmanuel Monsallier

The kitchen is led by chef Emmanuel Monsallier, who interprets the season’s best produce through a lens of classic French technique.
