The story
At 27 rue du Dragon, Chef Cyril Lignac has revived a classic Saint-Germain-des-Prés address. Aux Prés pays homage to the iconic 1950s bistro that once occupied the space, keeping its signature floral wallpaper while reimagining everything else with a clean, contemporary eye. The result is a warm, intimate setting — what the restaurant calls “a parenthesis, with a touch of Germano-Pratin nostalgia turned to today’s style.”
The kitchen leans into modern cuisine with a clear love for meat. Beef takes centre stage: a mature Holstein entrecôte for two, a 1kg côte de bœuf from Normande or the exceptional Black Pearl breed, and a classic steak au poivre. But the menu also travels — crispy sushi with salmon and chipotle, langoustine ravioli in basil bisque, and a black cod caramelised in miso sit alongside the cheeseburger and the bavette marinated in spices. Starters like the caramelised miso aubergine with sesame and lime, or the Madras-curry crab galette, set the tone.
For dinner, the bar turns out a clever cocktail list designed to avoid sweetness — think a Cardamom Smash with jasmine and Timut pepper, or a Frida Margarita with jalapeño and black salt. The wine list, curated by the chef sommelier, balances grands crus with lesser-known finds.
Aux Prés has earned a Michelin Recommended distinction, a fitting nod to Lignac’s ability to honour a neighbourhood relic while making it feel entirely of the moment.
