Baca'v par Gilles Choukroun: Paris Bib Gourmand Bistrot
Baca'v par Gilles Choukroun is a Parisian bistrot that feels like a genuine urban auberge, tucked into a quiet corner of the 5th arrondissement near the Jardin des Plantes. Chef Gilles Choukroun, who earned his first Michelin star just eighteen months after opening his debut restaurant over three decades ago, brings a wealth of experience to this convivial address. After years of high-profile stints, including the acclaimed Café des Délices and extensive consulting work, he took over Baca'v in February 2024. His goal was to immerse himself in the world of the classic Parisian bistrot, giving the space a distinctly “Vieux Bistrot Parisien” identity.
The interior has been entirely reimagined with copper from Maison Mauviel, new silverware and china, a mosaic welcome mat by a young artist, and a large mirror hand-painted with Choukroun’s two favourite wine regions. It is a setting designed for sharing the chef’s twin passions: cooking and wine. The menu, written on chalkboards, changes with the seasons and the produce from Choukroun’s network of suppliers across France. Dishes are rooted in French bourgeois tradition but delivered without pretension—think terrine de jarret de porc en gelée, paleron confit au vin, or tête de veau ravigotée. The wine list, which already exceeds 300 references, covers all of France and is curated with co-owner Louis-Benjamin Dagueneau.
This approach earned Baca'v a Michelin Bib Gourmand in 2026, an award that recognises good quality, good value cooking. It is a fitting nod to a kitchen that serves a three-course Michelin Bib Gourmand menu for a very reasonable price, alongside a lunch formule and a tasting menu. The atmosphere is warm and joyful, with a new terrace for sunny days and Saturday evening service now open. Baca'v is a place where instinctive, seasonal French cooking and a serious wine list come together in the simplest, most welcoming way.
