The Chefs and the Grill

BangBang in Paris channels Danish and Colombian culinary traditions into a lively Asian kitchen. Mads Christensen and Carlos Peñarredonda lead the brigade after stints at Chardon and Candelaria, directing the hearth toward smoky heat and complex Asian cooking. Chipotles and jalapeños move straight onto the barbecue, where high temperatures coax out deep flavors without masking the fresh ingredients underneath.

Plates and Flavors

The menu reads like a series of controlled explosions across the palate. Julienned green papaya salad arrives bright with crisp herbs, crushed peanuts, and cubes of fried tofu. A spiced steak tartare gets its kick from shiso leaves, mustard seeds, and toasted rice powder. Smaller bites like cheddar and pimiento verde croquetas find balance through ginger mango chutney, while BBQ chicken rests beside rice dusted with schichimi.

A Vibrant Dining Room

Orange neon signs bounce off azure blue tiles near a lime green service counter. The space sits comfortably within the Belleville neighborhood, offering both indoor energy and outdoor seating for warmer evenings. Desserts close out the meal with equal intensity, featuring a banana split built around ripe plantains, coconut crumble, and buttermilk ice cream. Every corner reflects the same fearless mix of Nordic precision and tropical warmth.

Bang bang! Who’s there? Mads Christensen (ex- Chardon ) and Carlos Peñarredonda (ex- Candelaria ), who hail from Denmark and Colombia respectively, and who are setting off culinary fireworks in the Belleville neighborhood in Paris! The two chefs are a good fit for one another in their colorful spot (a lime green bar, azure blue tiling, orange neon lights), where chipotle, jalapeños and other spicy things find their way onto the barbecue and the explosively flavorful menu. Our taste buds were in for a wild ride the night we went: a decadent cheddar and pimiento verde croqueta tempered by a lovely ginger mango chutney; mouthwatering julienned green papaya salad with plenty of herbs, peanuts and crispy tofu; a spicy steak tartare with shiso, mustard seeds and toasted rice powder; chicken marinated in BBQ spices that could have used a little sauce, paired with rice sprinkled with schichimi (seven Japanese spices) that was more convincing; and to end the meal with a dessert à la carte, there was a striking banana split made with plantains, coconut crumble and buttermilk ice cream… Incredible! // Nour Ghanem
