The story
Bellefeuille is the gastronomic restaurant of the Saint James Paris, a château-hotel in the city’s exclusive 16th arrondissement. Fully redesigned by Laura Gonzalez, the hotel blends 19th-century curios, neoclassic mouldings, and art deco details. The restaurant sits within this intimate, private setting, offering an experience that feels both romantic and distinctly Parisian.
Chef Grégory Garimbay describes himself as a "poet of the palate." His cooking is an homage to French gastronomy and its terroirs, built on raw ingredients transformed with sincerity. He earned his first Michelin star in 2022 for his work at Bellefeuille, a recognition of this precise, ingredient-driven style. Garimbay’s career includes formative time alongside Alain Ducasse and his mentor Christophe Saintagne.
Pastry Chef Coline Doussin, who took the helm at Saint James Paris at just 25, brings a bold, creative approach to desserts. Her work uses strong markers like pepper, spices, and herbs while favoring natural fruit flavors. Her signature creation, Chocolate and Pine Needles, smokes the chocolate with burnt pine needles and refreshes a white cheese sorbet with fresh ones.
Beyond the main dining room, the restaurant’s terrace offers outdoor seating in a private garden designed by Xavier de Chirac. There is also the Library Bar, a space for tea time on weekends or evening cocktails. The wine list is marked as especially interesting, and the atmosphere is that of a grand but welcoming Parisian home.
