An Instant Classic on Rue Saint-Dominique

In 2023, restaurateur David Bottreau — long-time right hand to the celebrated chef Christian Constant — opened Bistrot des Fables on a storied Parisian corner. The address previously housed Café Lignac, but Bottreau’s vision was to revive the spirit of the classic Parisian bistrots that came before. The result is a room of solid wood tables and an inviting zinc counter, a space that feels both timeless and immediately welcoming.

Bottreau’s connection to the “Fables” name runs deep. It began in 2004 when Constant bought the original fish restaurant that would become the Table de la Fontaine, then Fables de la Fontaine. By 2006, Bottreau had partnered with Constant and earned a Michelin star that lasted twelve years. After Comptoir des Fables opened in 2019, the Bistrot arrived in 2023 as a more casual sibling — one that quickly earned its own recognition.

Chef Guillaume Dehecq's Precise Cuisine

At the stoves is Chef Guillaume Dehecq, whose career includes stints at the George V, Le Fitzgerald, and L'Ami Jean. His cooking is described as demanding, legible, and centered on taste: precise cooking, worked sauces and jus, clean pairings with no unnecessary effects. It is contemporary French cuisine, focused squarely on the product and the pleasure of eating.

Dehecq pilots a seasonal menu that changes with the arrivals market. Dishes captured by the restaurant's own camera include a classic blanquette de veau with pilaf rice and carrots, a gratinéed cassoulet, and a tarte chocolat caramel with almond milk ice cream. The food is grounded in the tradition of the Parisian tavern, updated with a modern sense of exactness.

In 2025 and again in 2026, the Michelin Guide awarded Bistrot des Fables a Bib Gourmand, its distinction for good quality, good value cooking.
