Since 2019, Bistrot Instinct has been a fixture on the rue de Picardie in the Haut-Marais, offering a relaxed and warm take on modern cuisine. The restaurant’s origin story is refreshingly straightforward: a casual evening among friends, a shared dream, and the decision to follow their intuition. The result is a cozy space where the open kitchen sets the tone, inviting guests to watch the team at work.
At the stove is chef-associé Maximilian Wollek, who honed his craft in prestigious houses before bringing his instinct for refined, generous cooking to this address. His approach is firmly rooted in bistronomy: seasonal, colorful, and unabashedly gourmand. The menu changes with the market, and vegetarian options are always included. A tasting menu of five signature dishes, available with a dedicated drinks pairing, offers a full immersion into his current season’s inspiration—recently highlighting spring ingredients like artichoke, seabream, and beef fillet with miso.
Behind the bar, Simon Martel brings his experience from Parisian palace bars to create a serious cocktail program. His signature drinks are designed as an essential prelude to the meal, and the wine list is exclusively French, sourced from environmentally conscious vineyards across the country.
