The story
Born in Hokkaido in 1977, Shinichi Sato refined his skills in Sapporo before moving to France. He worked at the celebrated Parisian restaurant L’Astrance, then opened Passage 53 in 2009. There he became the first Japanese chef in France to earn two Michelin stars, a distinction he held for eight consecutive years. In 2019, he closed Passage 53 to pursue an even more uncompromising vision. That vision took shape as Blanc, which opened in October 2023 on Rue de Longchamp. The restaurant earned one Michelin star in its first year and was elevated to two stars in the 2025 guide.
“My journey in France began with a fascination for its ingredients and wine,” Sato says. “Twenty-five years on, my commitment to excellence in produce remains unchanged.”
The dining room is a sanctuary designed by the renowned architect Kengo Kuma. Carefully selected materials come together in a harmonious, serene setting that reflects the restaurant’s name. Light and texture guide the experience, creating an atmosphere of quiet focus on the meal ahead.
Blanc offers an exclusive selection of tasting menus that honor the sublime purity of seasonal ingredients through modern French culinary artistry. The kitchen orchestrates textures, temperatures, and authentic flavors. Menus range from a lunch option (Wednesdays and Saturdays) to the signature Menu Chef and an intimate Chef’s Table for up to four guests. The cuisine is built around seafood and seasonal produce; dietary restrictions require advance notice.
A journey through more than 1,500 exceptional vintages, the cellar is centered on Burgundy. Selected with deep reverence for wine, it complements Sato’s cooking with precision and depth.
