The story
Bloom is the first restaurant in France to offer 100% plant-based sushi – what they call "sushi botanique." Located at 99 rue Jouffroy-d'Abbans in the 17th arrondissement, the restaurant proves that omakase can be entirely vegetable-driven without sacrificing depth or technique. Every piece is free of fish, eggs, cream, and dairy. Instead, the kitchen works with seasonal produce, building textures and umami through careful preparation and house-made sauces.
The project is led by Dominic Bujold, founder of Sushi Shop and the LOV vegan restaurants in Canada. In Paris, the vision is carried by a trio trained at the Institut Paul Bocuse: Charly Terrade oversees development, Hugo Pencedano manages operations, and chef Nicolas Brivet creates the menu. Brivet’s background includes stints from Courchevel to New Zealand, and his cooking at Bloom is precise, contemporary, and quietly inventive. The restaurant describes his approach as "surprising without destabilizing, innovative without losing pleasure."
Bloom earned a Michelin recommendation in 2026, a recognition that aligns with its ambition: refined plant-based dining in an elegant, minimalist setting inspired by Japanese aesthetics. The restaurant offers lunch and dinner daily, with counter seating, outdoor tables, and takeaway. A selection of original cocktails and traditional sake completes the experience.
