Bonvivant Pizza delivers a refined take on Italian pizza right onto Rue des Écoles in Paris. After spending a year traveling across France and Italy, the team settled on a Roman format that prioritizes finesse over heaviness. Every base undergoes a strict two to three day fermentation using a blend of three organic flours. This extended rest period breaks down the starches to guarantee a crust that stays light and highly digestible.

Seasonal toppings and classic combinations

The kitchen layers its bases with organic tomato sauce and carefully sourced produce that shifts with the calendar. These Roman-style pizzas avoid heavy toppings in favor of seasonal clarity. The Coin du feu pairs fior di latte cheese with roasted sausage and winter squash. A straightforward Carbo relies on cured guanciale and sharp pecorino for a richer profile.

The cabana and the wine list

Recognized by Le Fooding for its disciplined approach, the dining room features charred wood paneling and a striking lightning flash mirror. Alabaster pedestal tables provide a cool contrast to the warm tones of the baked goods. The beverage program leans heavily toward natural Italian vintages rather than heavy reds. A crisp Negroamaro or a sparkling Sicilian white cuts through the richness of the floury crust perfectly.

Is our collective obsession with “Neapolitan” pizzas with fluffy crusts and generous toppings (finally) over? In any case, the pizzeria from the guys at Bonvivant (their bistro is located right across the street) might begin to answer that question… In this chic cabana (charred wood, a lightning-flash-shaped mirror, alabaster pedestal tables), the pizz’ are made with a sort of biblical simplicity: thin and crispy dough prepared using organic flour and matured for three days, topped with organic tomato sauce and carefully sourced produce. Choose between five classic and five seasonal options, like the excellent “Coin du feu” (fior di latte, sausage and squash, €15), picked over a tempting Carbo (guanciale, pecorino, €15). Our only complaint are the Left Bank prices, with a Margherita at 11 bucks and the classics (Regina, Piquante) hovering around 15 euros. To quench your thirst, natural Italian nectars take center stage: a nice Negroamaro from Progetto Calcarius (€6 a glass), a sparkling Sicilian white Voria from La Porta del Vento (€34 a bottle), a Don Chisciotte from Campania (€49), etc. Pizza €11-16. // V.V.
