At Boutary, the kitchen is led by Christophe Boucher, a Breton chef whose career spans some of France’s most prestigious addresses — La Mare aux Oiseaux, Le Grand Véfour, Ledoyen, and the George V. Trained in both savoury and pastry, he brings an eclectic, inventive touch to every plate. His cooking marries fine seasonal products with unexpected pairings, all served with a spirit of conviviality that defines the house.

The Surprise Menus

Boutary operates on a “carte blanche” principle: the menu is revealed only at the table, a shared experience for the whole party. Guests choose between a five-service tasting menu (€112) or a seven-service version (€148), with lunch options starting at €58. The format encourages trust in the chef’s imagination. Past examples have included dishes such as Pomme de Terre Boutary, smoked over beech wood, with aged caviar and sour cream — a signature that reappears in variations.

Caviar from the Maison

Caviar is the house’s flagship product. The Maison Boutary owns its own sturgeon, raised in a mountain lake in Bulgaria’s Rhodope Mountains. The caviar is aged and distributed only to a select number of establishments worldwide. At the restaurant, it can be added to any tasting menu as a royal or spoon service, or enjoyed in a dedicated three-course caviar menu (€99). The dining room also features a “caviarothèque” for guided tastings.

Atmosphere and Setting

The dining room, designed by contemporary artist Ann Grim, is a modern nod to the original Château de Boutary. The atmosphere balances relaxation with refinement — the restaurant’s own words are “décontraction et raffinement.” Located on Rue Mazarine in the heart of Saint-Germain-des-Prés, Boutary has held a Michelin Recommended distinction since 2016, a recognition that underscores its consistent quality and distinctive identity within a line of Maison Boutary restaurants spanning Paris and Tokyo.
