The story

Buttes Snack Bar Paris: A Low Intervention Wine Haven

The founders and their vision

Buttes Snack Bar in Paris operates as a dedicated French snack bar and natural wine destination. Pierre Forest, Benoît Baud, and Clément Vezat opened the venue inside the shell of the former Capitale Belleville coffee shop. The trio spent years training at established Parisian venues like Bambino, Jones, and Double Dragon before deciding to build something simpler. They stripped the space down to focus entirely on accessible food and uncomplicated service.

Shared plates and straightforward cooking

This Parisian snack bar keeps its menu focused on small plates designed for passing around the counter. Guests order rillettes from the Perche region that arrive scattered with whole mustard seeds. Grilled squid rests beside buttery new potatoes dressed in a sharp nduja jus. All dishes land on mismatched vintage china that reinforces the unpretentious setting.

Natural wines and quiet evenings

Every bottle behind the bar comes from producers who skip heavy manipulation in the vineyard and cellar. The selection stretches from the limestone slopes of the Loire Valley to the warmer foothills near the Caucasus. Staff pour these low intervention labels alongside the shared plates without pushing expensive flights. The combination of curated sips and relaxed pacing helped the venue secure Le Guide France’s Best pick-me-up award in 2024.

It didn’t take Pierre Forest, Benoît Baud and Clément Vezat long to transform the old Capitale Belleville coffee shop into their wine haven. Now you’ll find a simple bar, where the trio who trained at some beautiful Parisian establishments (Bambino, Jones, Double Dragon) only serve low-intervention gems, sourced from the Loire hillsides to the foothills of Caucasus. Savor them all while snacking on shared plates, served on old-fashioned china: rillettes from the Perche tickled by mustard seeds, grilled squid and new potatoes in a vivifying ‘nduja jus, chocolate mousse drizzled in vermouth syrup… // Pica Bidon
