The kitchen avoids unnecessary complexity, relying instead on precise knife work and carefully sourced produce.

Signature Bites and Brunch Favourites

Pollack rillettes topped with anchovy taramasalata, crisp radish, and sea beans set a high standard for the weekly menu. Veal tartare arrives dressed in a sharp cocktail sauce alongside pan con tomate and chervil. The skate and olive terrine rounds out the savoury selections when available. These structured plates anchor the brunch service and draw steady crowds throughout the day.

On the ground floor of the Fondation Pernod Ricard in between the library and the contemporary art gallery, Franck Baranger and Edouard Bobin, two of the sharpest blades in the bistrosphere (Le Pantruche, Caillebotte, Belle Maison, Le Coucou), have taken over Café Mirette alongside Pauline Labrousse. At this blindingly white coffee shop named after the nickname Paul Ricard gave to his wife, you’ll find an even-more dazzling terrace where a nearly religious silence reigns, located in the middle of the busy Saint-Lazare neighborhood. Expect time-tested plates of the aforementioned establishments parading out of the kitchen: pollack rillettes topped with anchovy taramasalata, radish, sea beans and mustard seeds, served with luxurious toasted white bread; veal tartare launched into orbit by an electrifying cocktail sauce, paired with pan con tomate and chervil; or even a skate and olive terrine. It’s no surprise that the carrot cake with cream cheese frosting felt pretty tame in comparison… The menu gets simplified at happy hour, with straightforward tapas (green olive tapenade, a cheese plate sourced from La Ferme d’Alexandre, etc.), plus lovely cocktails to go with it all. // Adrien Nouviaire
