The story
Capsule is a restaurant in the 14th arrondissement of Paris, across from the Hôpital Cochin, that describes its cooking as instinctive, contemporary, and seasonal. The kitchen works directly from the market, crafting a menu that changes with what is best at any given moment. The dining room is simple, with a touch of retro elegance, and the team is described as fresh and talented.
The menu is built around produce from carefully chosen partners: a curated selection of committed winegrowers, organic artisans, and what they call the best bread in Paris, from JL. Poujauran. Starters might include a perfect egg with kohlrabi and watercress cream, or a crispy langoustine ravioli with an Asian-inspired bisque emulsion. Main courses range from a marinated butcher's cut with chicken jus and Ratte potatoes to a 36-hour confit pork loin with smoked potato purée and blood orange sauce. A skrei confit with glazed shiitake and dashi broth, and grilled scallops with braised lettuce and carrot mousseline, also feature.
Desserts are equally considered, from a pecan chocolate fondant with coffee ganache to a Paris-Brest with a hazelnut tuile, and an île flottante with salted butter caramel. This focus on precise execution and high-quality ingredients has earned Capsule a Michelin Bib Gourmand, an award for good quality, good value cooking. The praise is echoed in press reviews, which highlight “hyper-soigné” plates and perfect seasoning.
Open from 08:00 to midnight, with lunch service from 12:00 to 14:30 and dinner from 19:00 to 22:00, Capsule offers a lunch formula as well as a full à la carte menu. The restaurant also has a 100 m² space available for private events, with a modular setup, projector, and wifi. For those seeking a genuinely contemporary, season-driven meal in a welcoming setting, Capsule delivers.
