He maintains a charcuterie-obsessed approach to sourcing, ensuring every item meets high standards. Shelves display an assortment of canned goods and condiments, framing the refrigerated cases where cured meats are stored for sale.
The inventory emphasizes distinct origins, showcasing a Mangalitza ham from Hungary and Tuscan peppered ham, with Iberico de Campo also available. Baked options introduce varied aromatics, including a parsley-dressed Bourgogne ham and a Vosges ham smoked over hay.
