The story

Clamato, Paris: Sustainable Seafood with a Bib Gourmand in the 11th

A Seafood Bar with Conviction

Clamato is the Parisian seafood bar that lets the day’s catch from the Atlantic coast dictate its menu. Deliveries arrive daily from ports like St Jean de Luz, Concarneau, and l’Ile d’Yeu, and every product comes from artisanal, sustainable fishing methods — line, bolinche, and casiers. Oysters are wild or sourced from natural spat. It’s a straightforward, ingredient-driven approach that earned Clamato a Michelin Bib Gourmand for good quality, good value cooking.

What to Expect

The space is casual and energetic, with counter dining that puts you close to the action. No reservations are taken — just walk in. The menu changes daily, but recent offerings give a clear picture of the style. Start with a bonito rillette or smoked cod roe tarama with zaatar. Move to cockles with smoked vinegar butter, or raw cuttlefish from Oléron with sesame and chili. Larger plates include a whole sea bass from Oléron with sauce béarnaise, and a mixed seafood platter with half a rock crab, whelks, sea urchins, and clams.

Drinks with the Same Care

The wine list is a serious affair, featuring growers like Ganevat, Selosse, Radikon, and Dard et Ribo, many from the natural wine movement. By the glass options include a cold Junmai Daiginjo sake from Nagayama Honke, a Catskills herb vermouth, and a cider distillate from Cyril Zang. Even the non-alcoholic choices show attention: hot infusions of fresh herbs and fruit juices from La Table des Lutins.

Clamato is part of the Septime family, but it stands entirely on its own — a place where the sea’s daily rhythm is the real star.

Tomette tile floors, wooden ceilings, a long bar, moss green tables… Welcome to Bertrand Grébaut and Théophile Pourriat’s (the duo behind Septime) cool seafood joint, where the fresh Atlantic catch winds up on some deliciously briny plates. On ours, the night we went: incredible squid tagliatelle with fennel; subtle smoked haddock with potatoes and a Savagnin-infused cream; ultra-tender purple eggplant served with trout roe and cashews; impressive grilled zucchini topped with anchovies and mustard seeds; before the lethal finale, a stunning Clamatarte made with maple syrup and topped with whipped cream – unless you’d prefer their strawberries and cherries marinated in a fig leaf sabayon (when in season!). // N.K.
