The story

Comice, Paris – Modern French Cuisine with a Michelin Star

Comice in the 16th Arrondissement

Comice is a Michelin-starred restaurant in the 16th arrondissement of Paris, serving contemporary French cuisine built around the best of each season. Chef Noam Gedalof and sommelier Etheliya Hananova – husband and wife, chef and sommelier – pour more than thirty years of combined experience from California, New York, Montreal, and Paris into every detail. Their approach is product-driven, letting ingredients speak while refined technique adds depth.

Food, Wine, and a Signature Soufflé

The menu changes with the seasons and is offered both as a tasting menu and à la carte – a recent addition that gives guests more flexibility. A chocolate soufflé, created in collaboration with author and pastry expert David Lebovitz, has become a signature. The wine list is equally intentional, focused on grower-producers and small artisan vignerons, reflecting Etheliya Hananova’s deep expertise.

The Dining Experience

The atmosphere is elegant without being stiff. There is no formal dress code; business-casual or elegant attire fits naturally, and no jacket is required. The kitchen can adapt to pescatarian, lacto-ovo vegetarian, and gluten-free diets with advance notice, though the reliance on butter means vegan options are not available. Children are welcome, but there is no separate menu for them.

Comice earned its Michelin star for high quality cooking, a recognition that aligns with the precision and care evident in every dish. The restaurant has also been highlighted by The New York Times, Eater, Condé Nast Traveler, Le Fooding, and numerous other guides and publications – a testament to its place in Paris’s Modern Cuisine landscape.

Despite its bourgeois trappings (Sylvie Coquet porcelain, bouquets by Debeaulieu, starched white tablecloths), we promise you won’t be bored at Comice! Located in the depths of the 16 th arrondissement, running things is the lovely Canadian couple, Etheliya Hananova (ex-Sergent Recruteur) and Noam Gedalof (ex-Astrance). The former tends to the guests and the wines, while the latter stitches together some intricate plates – the five-course menu the other night simply went to prove it: gougère cheese puffs in Mornay sauce that tickled the taste buds; delicious line-caught bass carpaccio woken up by cucumber marinated in a briny mousse; jubilatory golden gnocchi with black trumpet mushrooms in a stunning Albufera sauce with jus de viande ; lamb prepared three ways (fillet, sweetbreads and bone marrow) with chard and carrots in jus ; before a spirited white peach sorbet with Champagne mousse, then an incredible chocolate soufflé topped with an erudite ice cream made with six different varieties of vanilla! // A.A.
