The story

Comme au Vietnam in Paris: Authentic Vietnamese Cooking Since 1998

The chef and the kitchen

Comme au Vietnam in Paris serves Vietnamese cooking rooted in a single family’s journey from the Mekong delta to the thirteenth arrondissement. Duc Hieu Truong arrived in France in 1985 after years spent as a judo champion and political prisoner, and his wife soon recognized his natural talent behind the stove. He opened the original address on Rue Caillaux with a clear directive to prepare meals exactly as he cooked for his children at home. This uncompromising approach means every broth simmers slowly and every herb arrives fresh from morning deliveries.

Signature plates and sourcing

The menu centers on dishes that travelers often find missing abroad, starting with a pho broth scented with cinnamon and star anise. Guests regularly order the banh cuon steamed crepes filled with pork and shrimp, which pair with a carefully balanced nuoc mam. Grilled lemongrass pork served alongside glass noodles and lettuce leaves rounds out the savory selections. This commitment to traditional Vietnamese kitchen methods ensures every ingredient supports the final flavor profile rather than distracting from it.

Recognition and room atmosphere

Le Fooding recently listed the establishment after diners noted how closely the food mirrors daily eating habits across Vietnam. The dining space reflects that same straightforward hospitality, favoring sturdy tables and steady service over decorative flourishes. Longtime patrons return through the colder months specifically for the warming bowls, while the staff maintains a quiet rhythm that matches the unhurried pace of family meals. The legacy continues without alteration, letting the recipes speak for themselves.

“Here, we eat like we would over there,” the people seated next to us tell us repeatedly, all fans of Monsieur Truong, a former judo champion and bodyguard for the South Vietnamese president. It’s certainly true that his pho is light and divinely subtle, made with a broth that smells intensely of cinnamon and star anise, in which you’ll find tender slices of beef… But there’s so much more to try! Consider the banh cuon (small steamed crepes – we opted for the pork and shrimp version), which are exceptionally tender and delicious when dipped into the carefully-crafted nuoc-mâm sauce; or the bún cha Hà Noi (grilled lemongrass pork), to entangle with glass noodles and lettuce leaves, which doesn’t disappoint either… What about dessert? There’s a tricolor sweet made with lots of love, featuring azuki beans, coconut, caramel and pandan – an extremely comforting combo. // James Patisson
