The story
Contraste, on rue d’Anjou in the 8th arrondissement, is a restaurant built on the idea of deliberate opposition. The name is not a gimmick — it runs through the cooking, the wine list, and the very décor. Since March 2026, chef Antoine Perchoc has been writing the next chapter, bringing a self-assured, iodised style that honours his Breton roots.
Perchoc is largely self-taught, shaped by a background in sport that instilled rigour and discipline. He trained under Frédéric Anton at Le Pré Catelan, then joined the Éclore group in 2023. For two years he worked as sous chef alongside Louis de Vicari at Contraste, becoming the driving force behind the restaurant’s identity. Now at the helm, Perchoc gives centre stage to seafood and vegetables — his cooking is described as a true odyssey of surf-and-turf combinations, contrasting and fully assumed.
In 2022, Contraste received its first Michelin star, a recognition the restaurant has held ever since. The inspectors praised the precision of seasoning and cooking, and the personality that shines through each dish. That same clarity — respect for seasons and terroir — continues under Perchoc, who creates clean plates that let the produce speak.
The dining room was conceived as an elegant extension of the culinary experience. Working with architect Michel Amar, founder Stéphane Manigold drew inspiration from the kitchen’s creations to design a “mirror décor”. Noble materials — green and black marble, leather — reflect a restrained chromatic palette, framing the chef’s gestures.
The wine list, built with Anselme Selosse (who originally created the “Contraste” cuvée), favours temperament over trend. It reveals old vintages and unique bottles that winemakers usually keep for themselves. Here, those are the ones put forward.
Perchoc’s arrival marks a shift toward a more assertive, marine-driven identity while staying true to the house’s core: accessible elite gastronomy. The modern cuisine at Contraste is both precise and unpretentious, a balance that makes the restaurant as welcoming as it is accomplished. With its Michelin star, thoughtful wine selection, and a chef who knows exactly where he wants to go, Contraste continues to evolve — without losing its defining edge.
