The story
CRU brings a modern bistro approach to the quiet streets of Auch, operating out of a converted former bookstore. Chef Isabelle Williams and wine specialist Bartholomé Airoldi designed the space to highlight direct relationships with regional farmers and vintners. This grounded philosophy recently caught the attention of Le Fooding, which highlighted their consistent use of carefully sourced ingredients like meat from Aqui’Chò and vegetables from La Petite Ferme de l’Isle. The team treats every delivery as a chance to adjust their planning, prioritizing seasonal rhythms over rigid menus.
The bistro kitchen prepares everything from scratch, shifting its lunch offerings to two distinct options each day based on market arrivals. Evening guests encounter a rotating selection of tapas-style plates meant for sharing alongside bottles from the attached cellar. Recent tasting notes point to an ultra fresh leek maki glazed with sesame oil and lemon, served with yogurt cream and soy mayonnaise. Other highlights include a medium rare veal steak accompanied by sweet potato mash, mizuna, and fried sage leaves, finishing with a simple citrus pavlova.
Metal mesh doors frame the entrance while a dedicated wall features thousands of discarded corks, creating a tactile backdrop for casual conversations. The wine room operates continuously throughout the week, offering both retail selections and a fixed corkage fee for on-site consumption. Guests often linger over these curated natural wines while enjoying the relaxed pacing of the bistro service.
