On Place du Maréchal-Juin in the 17th arrondissement, Dessirier has been a Parisian address for oysters, shellfish and crustaceans since 1883. Since 1996, the Rostang family has taken the helm, preserving the marine spirit that made the house famous. Today, Michelin recognises Dessirier’s consistent quality, recommending it as one of the city’s finest seafood destinations.

Chef Olivier Fontaine sources fish and shellfish directly from artisanal fishermen in Normandy, Brittany and Vendée. The menu changes daily according to arrivals, ensuring only the best of the season. The kitchen’s commitment to responsible sourcing is formalised through the Ethic Ocean Charter. All fish arrive whole and are broken down in-house; trimmings become sauces and fumets. This approach respects both the product and the sea.

The Classics and the Cellar

Certain dishes have become legendary here. The macaroni gratin with Breton lobster, a recipe from Michel Rostang, is described as something “to taste once in a lifetime.” Other signatures include bar puff pastry in the Bocuse style, cod aioli with spring vegetables, and generous pieces to share. Aioli, oysters from Maison Cadoret, and a plateau de fruits de mer piled with crevettes roses, bulots and house-marinated salmon are all available to enjoy on the terrace or to take away.

Caroline Rostang curates the wine list, favouring small estates and grower wines. Eventually, the menu will feature only wines from winegrowers, highlighting the work of French producers and their secret nectars. The cellar is also open for direct purchase at caviste prices.

A Place for Gatherings

Beyond the main dining room, Dessirier offers three private salons for groups of 4 to 18 people, suitable for business lunches, family celebrations or dinners among friends. The team also hosts intimate winemaker dinners around a table d’hôtes, led by Caroline Rostang, for 8 to 24 guests. Whether dining in, taking away, or ordering delivery within the hour, the spirit remains the same: fresh, seasonal seafood served with straightforward elegance.
