The story
Dogma brings its American cooking to a glass and steel shop on Rue des Petites Écuries in Paris. Founders Mathieu Grichois and Jordan Robinson previously built a reputation at the nearby wine bar Pompette before pivoting to a dedicated American kitchen. Their approach treats each piece of poultry as a careful balance of texture and timing.
The menu centers on two main burgers that showcase different flavor profiles. The OG features deboned thigh meat pickled and fried alongside marinated red cabbage, white barbecue sauce, and tart pickles inside a soft brioche bun. Guests seeking heat can order the spicy El Diablo, which layers crispy chicken with pickled jalapeños, iceberg lettuce, and ranch dressing. The kitchen rounds out the meal with buttermilk biscuits, smashed new potatoes draped in aged gouda sauce, and a light fennel slaw.
Critics have taken notice of this straightforward approach to comfort food. Le Fooding included Dogma in its 2026 guide, praising the crispy chicken and hearty portions as an immediate success. The space functions as a streamlined takeaway counter, inviting guests to grab a box and eat quickly. Diners should note that the kitchen skips desserts entirely, keeping the entire American cuisine lineup centered on savory plates.
