The story

Dumbo Petites-Écuries Paris: Award-Winning American Smash Burgers

Founders and Expansion

Dumbo Petites-Écuries serves award-winning American food in Paris, extending the reputation of founders Charles Ganem and Samuel Nataf beyond their original Pigalle location. After securing Le Fooding's Best Burger title at the first site, the pair opened this newer outpost to maintain their high standards for ingredient quality and technique. The menu remains tightly curated, emphasizing precision over volume so every plate reflects the discipline developed across their growing network.

Signature Smashes and Standouts

The kitchen delivers signature smash burgers constructed on shiny potato buns with patties seared until the edges turn crisp. Each build layers sharp cheddar, caramelized onions, pickles, and condiments like mustard and ketchup to balance the rich beef flavor. Guests also order the house star reimagined as a buttermilk fried chicken sandwich, offering a plant-based alternative that maintains the restaurant's texture standards while honoring American culinary traditions. A thick slice of apple pie rounds out the meal when portions allow.

Space and Ritual

A cream-colored façade and a barely visible sign mark the entrance to this incognito spot. Inside, a white countertop anchors the room where guests stand to eat, following the brand's preferred service ritual. This arrangement keeps the atmosphere relaxed and directs attention immediately to the counter. Double-fried fries provide a crunchy complement to burgers served during both the midday rush and evening service.

Charles Ganem and Samuel Nataf have struck (fat) again! After delighting the Paris scene with their iconic spot in Pigalle (winner of Le Fooding’s Best Burger of 2020 award), they decided to do some remodeling on Rue des Petites-Écuries. That’s where the latest Dumbo location serves the best smash burgers in Paris to an in-the-know crowd, who refuse to let the new shop’s incognito look fool them (cream-colored façade, a barely-there sign, a white countertop). Devoured standing up at the bar (as tradition requires), the day we went for lunch: a carefully made burger on a shiny potato bun, a smashed patty with beautifully crispy edges, cheddar, onions, pickles, mustard and ketchup, paired with thin, double-fried French fries. Also available à la carte: the star of the house given the vegan treatment, a buttermilk fried chicken sandwich (which they had run out of the day we went), and apple pie for a tasty finale – if there’s any left… In short, an unfussy lunch that’ll leave you daydreaming about your next visit. // Jean Pascal
