The story
At Echizen Soba Togo in Paris, chef Keiko Matsui brings her heritage from Fukui to every bowl of Japanese soba. Her kitchen operates with the discipline of a monastery, reflecting the quiet precision of her roots in the former Echizen province. Matsui serves buckwheat noodles prepared to exact standards, offering both steaming hot versions and refreshing chilled preparations served over distinctive brutalist ceramics.
The dining room presents a stark, all-white aesthetic that encourages guests to focus entirely on their meal. A solitary communal table anchors the space, drawing diners into a shared, meditative rhythm as they enjoy their food. Le Fooding listed the venue for 2026, noting how the environment supports the meal.
Grated white radish, fried breadcrumbs, breaded pork, and wild vegetables await atop the noodles. The menu extends beyond noodles to include sides like fried eggplant seasoned with ginger and chilled soba served with lime in a delicate broth. For dessert, the kitchen offers tender mochi in green tea or black sesame flavors, alongside a unique Japanese buckwheat flan that echoes the main course ingredients.
