In the heart of Paris’s 2nd arrondissement, Fleur de Pavé is the expression of chef Sylvain Sendra’s decades of experience and his deep connection to two cultures: Japan and Peru. Born in Lyon in 1977 to a family of pastry chefs and bakers, Sendra trained at Vatel and worked with Alexis Gauthier in London before opening his first restaurant, Le Temps au Temps, at the age of 23. He earned his first Michelin star at Itinéraires on the Left Bank, where his bistro cuisine drew from travels across Asia and sparked a lasting appreciation for Japanese green tea.

After a year of consulting and travel, Sendra returned to Paris in 2019 to open Fleur de Pavé. The restaurant was immediately awarded two toques by Gault&Millau, and in 2026 it received a Michelin star for high-quality cooking.

Intention and precision

Fleur de Pavé’s cuisine is guided by what Sendra calls “intention.” He explains, “I feel that people there eat in the same way I live in my kitchen. Everything is about intention: giving the best after having received the best.” This philosophy translates into constant attention to detail, contrasts of textures, precise cooking, and a balance between acidity and gourmet notes. The menu fuses French culinary traditions with the clarity of modern cuisine, and Japanese influences appear subtly in the use of green tea and a respect for ingredient purity. Produce is sourced carefully—Yashamita’s Farm, an exceptional gardener in the Yvelines, is one of the restaurant’s partners.

The setting is welcoming and convivial, designed to make guests feel both comfortable and engaged. A tasting menu is offered, along with an à la carte selection. The wine list, presented by the sommelier, complements the seasonal menus; a recent example is the “Menu Île de beauté,” a six-course Corsican discovery menu with wine pairing.

Fleur de Pavé is open for lunch and dinner, with a calm, air-conditioned dining room that also welcomes pets. The result is a memorable dining experience that celebrates French heritage while embracing the precision and spirit of Japanese cuisine—all in a warm, unpretentious atmosphere.
