The story

Gemellus Paris – Modern Cuisine by Chefs Maxime and Clément Le Meur, Michelin Recommended

Origin

Gemellus takes its name from the Latin gemelli, meaning "twin brothers" – a fitting name for a restaurant born from the collaboration of twin siblings Maxime and Clément Le Meur. Maxime is the chef; Clément, the entrepreneur. Their restaurant sits on the left bank, at 37 avenue Duquesne in the 7th arrondissement of Paris, at the crossroads of the Invalides and UNESCO. The concept: a relaxed French gastronomy served in a warm, elegant setting.

Chef Maxime Le Meur

Originally from Brittany and trained in Grenoble, Maxime Le Meur honed his skills in Paris. He spent more than five years in the kitchens of Apicius under chef Jean‑Pierre Vigato, then worked at the Georges V and later at l’Affable in the same neighbourhood. After that, he rejoined Vigato for the reopening of the legendary Lapérouse. Today, Le Meur brings his own culinary vision to life at Gemellus – his own decor, his own colours, his own cuisine.

The Nuancier – Menus of Nuance

The menu, called Le Nuancier (the colour chart), evolves with the seasons. The phrase “les nuances” is woven into everything here: nuances of flavours, textures, colours. Guests choose between two degustation paths – the 5 Shades menu (80€) or the 7 Shades menu (100€) – or a lunch formula. A wine pairing option, curated by director Laurent, adds another layer of nuance (50€ or 70€). The cooking is modern cuisine, marked by original “terre‑mer” (land‑sea) combinations and sauces that are both subtle and powerful, elevating each dish without overwhelming it.

Atmosphere and Recognition

The dining room is designed as a “véritable écrin gastronomique” – a genuine gastronomic jewel box – with a décor that is both comfortable and sophisticated. This refined approach has earned Gemellus a spot in the Michelin guide for 2026, listed as Recommended. It is a place where the brothers’ shared vision and Maxime’s precise cooking create a distinct, personal experience in the heart of Paris.
