The story
Guefen began on Rue du Vertbois in the 3rd arrondissement, a discreet spot where precision and curiosity met. Now settled on Rue de Charenton in the 12th, the restaurant continues its journey with the same soul and ambition: to bring meaning back to the act of dining. In September 2025, Chef Yonatan Mary took the reins, bringing a creative energy shaped by his Moroccan-Iraqi heritage and training under renowned Israeli chefs. “Cooking kosher isn’t a constraint,” he says. “It’s a new language — one that invites creativity, honesty, and emotion.”
Guefen’s cuisine is ingredient-driven, seasonal, and deeply personal. The menu draws from the Middle East, Eastern Europe, and the Arabian Peninsula, reimagined with a modern touch. Seafood and seasonal vegetables take center stage. The signature six-course tasting menu, “Signature GUEFEN,” is described as “a living Mediterranean where the sea guides every plate.” Dishes like sliced yellowtail, pearl-pink charcoal tuna, and straw-smoked sea bass appear alongside floral desserts and seasonal vegetables. The winter menu includes a crispy pumpkin starter with pistachio praline, a chilled amberjack tartare with preserved lemon and Urfa pepper, and a citrus trio with fennel granita and Arak. The entire menu is kosher, certified TopK (Rav Wolff) — kosher lemehadrin halav Israel — a commitment that began in October 2023 after two years of intensive sourcing and refinement.
The dining room is designed for connection. Exposed beams, soft lighting, and warm textures create a serene, intimate atmosphere. The service is attentive but unhurried, reflecting a philosophy where hospitality is not a formality but a way of being. Guefen’s recognition by Michelin — Recommended for 2026 — affirms its place among Paris’s most compelling tables, where modern cuisine and Eastern European influences meet in a setting that feels both refined and genuinely welcoming.
