On the third level of the Bourse de Commerce – Pinault Collection, Michel and Sébastien Bras have opened Halle aux Grains, a restaurant-café that runs from noon to midnight every day of the year. The name nods to the building’s past as the “Halle aux blés,” Paris’s historic grain market. That heritage shapes the kitchen’s identity: grain becomes a guiding thread, not a gimmick, in what the Bras describe as a “cuisine de l’essentiel.”

A Space Defined by Light and Views

The restaurant is designed to let the architecture speak. From its perch, diners look out over the glass dome designed by Tadao Ando and across the Paris skyline. The interior and table design reinforce this clarity – nothing feels superfluous. The day unfolds in three rhythms: lunch, afternoon, and dinner, with suggestions that shift as the light changes through the space.

Modern Cuisine with a Sense of Place

The Bras family’s cooking, rooted in their years in Laguiole, finds a new expression here. The menu is not a replica of their flagship; it is an original repertoire built around grains – spelt, buckwheat, rice, and others – treated with the same respect they give to vegetables and meats. This is modern cuisine that feels grounded rather than trend-driven. The afternoon “quatre-heure” offers a choice of three pastries for 19 euros, a casual invitation to linger.
