HANADA

Chef Masayoshi Hanada’s intimate omakase sanctuary on the Seine, where each nigiri becomes a piece of art. Michelin Recommended 2026.

The story

HANADA Paris – Michelin Recommended Japanese Omakase on Quai Voltaire

On the Quai Voltaire

On the most beautiful avenue in the world – the Seine – Japanese chef Masayoshi Hanada welcomes guests to HANADA, a restaurant where his singular interpretation of Japanese gastronomy unfolds. The address is deliberately chosen: Quai Voltaire, a street lined with art galleries, where the dialogue between shadow and light echoes in every dish. The space is conceived as a sanctuary of slow time, a contemplative pause in the heart of Paris. The hinoki counter, though massive, recedes into a cinematic chiaroscuro, designed to disappear and let the chef’s gesture take center stage.

The Chef’s Vision

With more than twenty years of precision, doubt, and relentless pursuit, Chef Hanada brings a vision of sushi that is stripped to its essence. Trained in Japan’s most rigorous establishments, he builds each nigiri in a delicate equilibrium between the sea, the rice, and the hand. The ceramics that hold each piece are chosen one by one for their matte textures and muted reflections, reinforcing an aesthetic of contrast and restraint. For Hanada, cooking is an act of intention, where perfection is born from perseverance. Every evening, he composes a new omakase, a living work in which the invisible has its place.

An Omakase Experience

The menu is unique: Omakase du Chef at 350 euros per person. Served piece by piece, the nigiri evolve with the season and the product. Photography during the meal is not permitted – the chef wants memories to be etched directly in each guest’s mind. At the end of the tasting, he is happy to take a photo together. The limited number of seats ensures an intimate immersion, a meditation on taste and texture. The Japanese cuisine here becomes contemplative art, a contemporary embodiment of the “In Praise of Shadows.”

Recognition and Atmosphere

HANADA’s rigorous, personal approach has earned it a Michelin Recommended distinction for 2026, a quiet acknowledgment of the chef’s dedication. The atmosphere is one of reverence – air-conditioned, fine dining with counter seating, ideal for private parties. This is not a restaurant in the ordinary sense; it is a place where time slows, and the art of omakase reveals itself between light and shadow.

Looking for Hanada? If you’ve hit the Seine, you’ve gone too far! You’d be forgiven for walking straight past this discreet address from Masayoshi Hanada (ex-Sushi B), who keeps an intentionally low profile behind a black-lacquered storefront facing the river. Inside lies a sanctuary: a windowless room where stark white light cuts through enveloping darkness, inviting meditation and total disconnection – no photos or videos allowed! Ebony walls, ceramic sculptures and, center stage, a hinoki-wood counter set the scene for just ten lucky diners, seated face-to-face with the chef and his precise, expressive gestures. That evening’s omakase menu unfolded with quiet intensity: a simply poached turnip, meltingly tender, to open; deep-fried sesame tofu lavishly crowned with Oscietra caviar; understated sea bream sashimi with irisake (ume plum jelly), snow peas and ponzu; a flawless chawanmushi (Japanese savory custard) topped with egg yolk sabayon, crisp edamame and seaweed; and delicate skate cheek and shiitake mushrooms drifting in a pitch-perfect dashi… Followed by the long-awaited sushi procession, executed in a mesmerizing choreography: squid, sea bream, langoustine, white trout, crab, caviar, tuna belly, fatty tuna, akami bluefin tuna, amberjack, trout and mackerel, served in two acts and punctuated by a traditional fish fumet interlude. The denouement? Red miso soup, tuna futomaki with a divine omelet, and a gentle glide toward the finale: a heavenly rice, salt and olive oil sorbet, followed by fig with black sesame tofu cream and lemon jelly.
