The story
Jamat serves a spirited brand of Parisian bistro cooking at 33 Rue de Navarin. The kitchen belongs to Jacinthe Vandendriessche and Matthieu Sales, who named the room after themselves. Jacinthe previously worked in sports facilitation while Matthieu trained at Les Arlots and La Cuisinière Lyonnaise. Their straightforward approach earned a place on the 2026 Le Fooding list, which noted how well their sauces and living wines complement each other.
Matthieu builds his bistro plates around heat and texture rather than heavy refinement. A batch of perfectly fried spicy panisses arrives with chipotle mayo, while braised asparagus comes dressed in tangy sauce gribiche and briny capers. He also grills whole octopus under layers of hummus, speck, and bonito flakes before serving herbaceous veal kefta alongside roasted carrots and fennel.
