The story
Kubri in Paris anchors its menu in Lebanese cooking, drawing directly from the family history of founders Mayfrid and Ingrid Chehlaoui. They invited chef Rita Higgins, formerly of Baron in Beirut, to lead the pass and translate those roots into a contemporary framework. Her team treats every plate as a chance to refine traditional techniques while keeping the ingredients unmistakably familiar. A simple bowl of kibbeh arrives alongside house-made hummus brightened by generous pours of olive oil. Grilled cabbage rests in Aleppo pepper butter, scattered with crumbled feta, peanuts, and pickled apricot. The kitchen applies similar layering to cinnamon-smoked beef cheeks, which pool in a seven-spice jus beside charred green beans. Even the fried chicken receives careful treatment, finished with velvety toum and a sharp salsa of cilantro and chili.
