The story
La Borie takes its name from the family farm in Saint-Austremoine, Haute-Loire – more than seventy hectares of land preserved from pollution for over two decades. There, a permaculture-based agroecological system produces vegetables, herbs, fruits, poultry, sheep, snails, and honey without any pesticides or chemical fertilisers. The farm and the Paris restaurant form a completely closed circuit: every ingredient served comes from that land, and every kitchen waste – trimmings, by-products – is composted to regenerate the soil. This is not just farm-to-table; it is a regenerative cycle.
In the 15th arrondissement, the restaurant offers a single, unique menu that changes weekly, dictated entirely by what has been harvested.
