The story
La Mercerie Marseille operates as a focused bistro in the Noailles district, guided by chef Harry Cummins. After years steering the nomadic Paris Popup alongside Laura Vidal and Julia Mitton, the trio anchored their first permanent kitchen in this converted haberdashery. Their early pop-ups earned Le Fooding’s Best Pop-up prize in 2016, and the critical attention soon shifted to their fixed location when judges named them the Best Sophisticated Bistro in 2019. Laura Vidal manages the cellar, selecting wines from Loire and Burgundy producers she previously championed at Frenchie.
The evening Feed Me menu unfolds across five courses that shift daily based on supplier availability. Harry layers Mediterranean produce with techniques gathered during global travels, such as kombu confit mirin and sesame oil brushed over monkfish liver cubes. Dry-aged bluefin tuna arrives glazed with grilled head oil and seasoned with fermented melon and Andaliman pepper. Rich coco de Paimpol beans simmer in a spicy sauce thickened by crab roe, while a deboned barbecue lamb leg rests beside garlicky haricots verts and taggiasche olives. Each plate reflects a straightforward bistro kitchen philosophy built on precise cooking and unpretentious service.
Stripped bare walls and polished granito tiles anchor the dining room, leaving the focus squarely on the food and conversation. Guests can watch the brigade work from the chestnut wood bar or claim a table along Cours Saint Louis where summer shade meets street energy. The layout supports both quiet observation and lively exchange without ever feeling crowded. This relaxed bistro ethos keeps the space accessible for solo diners, couples, and groups alike.
