The story
On rue Saint-Honoré, in the heart of Paris’ Les Halles, chef Bruno Doucet runs a restaurant that embodies the spirit of bistronomie. His cooking is direct and honest: “the product, the seasoning, and the cooking” are the three pillars he names as essential. It is a philosophy that has earned La Régalade Saint-Honoré a Michelin Recommended distinction for 2026.
Doucet’s path began in Tours, raised in a family of hunters and goat-cheese producers. He trained under Charles Barrier, Jean-Pierre Vigato, and Pierre Gagnaire – a lineage that taught him precision without pretension. His menu changes frequently, always driven by the market and the seasons. Dishes like joue de bœuf braisé with a Bourguignon garnish or poitrine de cochon au Cantal confite show a kitchen that respects tradition while keeping things lively.
The dining room is managed by Cyril Sagot, a sommelier from Bordeaux who oversees the wine list with the same care Doucet brings to the stove. Together, they have created a place where the food is generous, the wine pairings thoughtful, and the atmosphere unpretentious.
The evening menu lists starters such as vitello tonato or carbonara de céleri façon risotto, mains like souris d’agneau confite or cabillaud rôti, and desserts that include a famed riz cuit au lait and a tarte fine aux pommes. The cooking is rooted in the French terroir, but the execution is modern and precise.
For those who cannot dine in, La Régalade also offers takeaway cocottes and a catering service called “Le Chef dans votre cuisine,” bringing the same bistronomie to homes and offices. The restaurant is open for lunch and dinner Tuesday through Saturday, with a private room available for events.
