At the corner of rue du Pôle Nord in the 18th arrondissement, Le Boréal presents a modern cuisine that is as precise as it is personal. Behind the familiar facade of a Parisian bistro—zinc counter, glass front, open kitchen—a table of notable ambition reveals itself.

The restaurant is the work of two chefs, Philippine Jaillet and Charles Neyers, who sign their menu à quatre mains. Their food is anchored in the seasons and driven by daily arrivals, with a clear memory of childhood flavors informing each dish. Jaillet, trained at Ferrandi and the Beaux-Arts, brings a rigorous, compositional eye to the plate, where balance and form dictate taste. Neyers, from a hotel-school background, has forged an instinctive, unbound style of his own.

Together, they offer a menu that changes with the ultra-seasonal opportunities of the market. Guests can choose from five or seven courses, omnivore or vegetarian. The cuisine, rooted in the justness of the product and the mastery of the gesture, quickly transcends the simplicity of the room.

Le Boréal’s intimate dining room welcomes up to 28 seated guests, and the team also caters private events off-site, ensuring the same precision and quality.
