Owners Anne Oury and Selim Mouhoubi spent years restoring this Saint-Ouen residence before handing the kitchen over to chef Laura. She translates those preserved recipes into seasonal plates that prioritize technique over trend. This steady method earned the spot a recent listing in Le Fooding, which praised the team for turning a neglected property into a neighborhood staple.

Dishes that slow the clock

The kitchen builds its service around time-honored French cooking rather than fleeting trends. A creamy base of chanterelle and oyster mushrooms gets finished with a runny egg and toasted hazelnuts for immediate richness. Hearty braises appear next, including a tender beef bourguignon accompanied by dauphinoise potatoes that echo a traditional Sunday table. Guests usually finish with a silky tonka bean crème brûlée or a chicken dish cooked slowly in vin jaune alongside soft pears.

Dining takes place across two distinct salons that keep the original architecture visible. Salon Simone features painted ceilings and marble chimneys that recall a small palace, while Salon Nelly uses bright yellow walls to frame views toward the outdoors. From across the street, Anne Oury (former hotel owner) and Selim Mouhoubi (real estate agent and music producer) watched as their neighbor slowly fell into disrepair – before finally rolling up their sleeves and bringing this handsome nineteenth-century building back to life. The result is a cozy hotel-restaurant with true family-home vibes, a huge terrace and inviting lounge spaces. Inside, decorative moldings and marble details flirt with bold colors, warm wood tones and Olivia De Bona’s frescoes. While over in the kitchen, Laura puts a modern spin on French bourgeois classics: creamy chanterelle and oyster mushroom soup crowned with a runny egg and toasted hazelnuts; textbook beef bourguignon tenderly braised, served with dauphinoise potatoes like a typical Sunday lunch; or chicken smothered in a fragrant vin jaune sauce, paired with new potatoes and softly poached pears; before ending with a rich, silky tonka bean crème brûlée.
